I didn't plant that many potatoes last year, which was a shame because the ones I had did really well. So I ran out of potatoes around the end of November.
I've been bouncing around the idea of indoor potatoes for a while now, and finally took the plunge. I have a mostly unused grow room sitting idle each winter, so why not?
Around the end of November, I filled a big container with potting soil, and planted my last remaining Russet Burbank potato. It was chitting already, so I was guaranteed greenery ate least.
I didn't do much of anything except to keep it watered and under grow lights.
